Lemongrass (Takrai) |
Lemomgrasses have long and narrow stems about 20-30 cm. long with pale green and small bulbous roots. Only the roots are used as a flavouring for soups e.g. Sour Shrimp Soup - Tom Yam Kung, Chicken Soup in coconut milk - Gai Tom Kha. Very thin sliced lemongrass can be eaten raw by mixing in salads e.g. Mussel Salad - Yam Hoikraeng, Shrimp Salad - Phla Gung |
