Kaffir Lime (Magrood)

The fruit of Kaffir Limes is round in shape (3-4 cm. in diameter), dark green in colour with thick and rough skin. The juice is sour. The leaves are dark green in colour and normally two are attached together. The leaves, the skin and the juice are used in cooking.

The leaves are used as flavouring in curries e.g. Beef Curry, Chicken Curry or soups e.g. Sour Shrimp Soup - TomYam Kung, Chicken Soup in coconut milk - Gai Tom Kha. Very fine cut stripes are used for garnishing and flavouring the dishes.

The skin is normally cut into very fine stripes and add to salads to give a mild limed flavour. Also as an ingredient in making curry pastes.

The juice is added to soups and salads to give a delicate limed flavour.
