The leaves are used as flavouring in curries e.g. Beef Curry, Chicken Curry or soups e.g. Sour Shrimp Soup - TomYam Kung, Chicken Soup in coconut milk - Gai Tom Kha. Very fine cut stripes are used for garnishing and flavouring the dishes. The skin is normally cut into very fine stripes and add to salads to give a mild limed flavour. Also as an ingredient in making curry pastes. The juice is added to soups and salads to give a delicate limed flavour. |
