Chilli (Prik)

Chillis have many different spieces in various colours, sizes and strengths. The smaller, the hotter. The hottest part of the chilli is the seeds, therefore, to milden the dishes, remove the seeds before adding them to the dishes. It is recommended to start with a small quantity first and add more if needed.

Prik Chee Faa; They are large in size and used in milder dishes or for garnishing. Both fresh and dried form are used as the main ingredient in curry pastes.

 
Prik Khee Noo; They are small in size but hotter and add heat to the dishes. The dried form is normally ground and used as a spice.
