Lesser or Aromatic Ginger (Grachai)
Only the roots are used for cooking. Lesser ginger is hot and slightly bitter with thin brown skin and yellow flesh, shaped like fingers hanging from the main body, about 5-10 cm. long. They have a vrey unique odour which can reduce the fishy odour of the dishes, by adding fine-cut stripes to the dishes e.g. Spicy catfish - Pad Ped Pladug, Eel Curry - Pad Ped Plalai, Noodles in Fish Curry Sauce - Kanom Jeen Nam Yaa.
