Lesser or Aromatic Ginger (Grachai) |
Only the roots are used for cooking. Lesser ginger is hot and slightly bitter with thin brown skin and yellow flesh, shaped like fingers hanging from the main body, about 5-10 cm. long. They have a vrey unique odour which can reduce the fishy odour of the dishes, by adding fine-cut stripes to the dishes e.g. Spicy catfish - Pad Ped Pladug, Eel Curry - Pad Ped Plalai, Noodles in Fish Curry Sauce - Kanom Jeen Nam Yaa. |
